WINING:

De-scraping, standing with the stems and then cold-extracting in a controlled environment. Alcoholic long-term fermentation at very low and graduated temperatures. Then the wine stays on its fine wine lees for two months with periodic stirring.

FLAVORING CHARACTERISTICS:

Glossy lemon-green color, nose with intense aromas of citrus and flowers, apricot, rose and rose-sugar supplemented with grapefruit notes. The mouth is thin with finesse and pleasant acidity that gives it a nerve and youthfulness.

PAIRS WITH:

Pasta salads, seafood, fish, shells and white cheeses.
